A chef suggests that a flavorful one-pot meal could contribute to a long and healthy life. This nourishing soup, rich in vegetables and legumes, draws inspiration from the culinary customs of the Blue Zones, known for their exceptionally aged inhabitants.
Chef Francesco Mattana recently shared his recipe for “live to 100 minestrone” on TikTok, where he has amassed over 500,000 followers. He described the minestrone as a comforting dish brimming with vegetables and legumes.
Sardinia stands out as one of the few Blue Zones globally, where residents have a higher likelihood of reaching 100 years of age, largely attributed to their diet. Francesco believes that the secret to the health benefits of the Sardinian diet lies in the use of fresh, seasonal ingredients, particularly abundant in vegetables and legumes.
The “live to 100 minestrone” includes ingredients to serve four individuals and not only offers nutritional value but is also easy to prepare using just one pot. Francesco demonstrated the cooking process in his video tutorial.
Starting by drizzling olive oil into the pan, he added the soffritto mixture of celery, onions, and carrots to build flavors without using vegetable stock. After sautéing the soffritto, he added sun-dried tomatoes, garlic, parsley, basil, fresh tomatoes, and diced potatoes.
After adding water and boiling the mixture, he recommended incorporating seasonal green leafy vegetables, chickpeas, and beans, then letting it simmer. Once ready, the soup can be seasoned and served with grated cheese or bread.
Sardinia, recognized as the first Blue Zone globally, boasts a high concentration of centenarians, with approximately 33.6 individuals per 100,000 reaching 100 years or older. The traditional Sardinian diet comprises whole-grain bread, beans, vegetables, fruits, and pecorino cheese.
BlueZones.com notes that Sardinians also consume mastic oil and limit meat consumption to special occasions. The island’s diet, rich in healthy components, contributes to the longevity observed in its inhabitants.
